World Calzone Championship
For Pizza & Pasta Northeast 2020 we’re adding the World Calzone Championship to our competition schedule. On Thursday, the competition area in the Exhibit Hall will feature contestants preparing their signature calzones and presenting them to the judges.
Classic calzones are usually made with pizza dough consisting of flour, yeast, olive oil, water, and salt. Folded in a half-moon shape, traditional calzones are made with marinara sauce spread at the bottom of the dough. However, there are also breakfast calzones that are filled with various omelet-oriented toppings, along with eggs and cheeses. But there is no end to the new types of calzone interpretations. In addition to pepperoni, ham, cheese and sausage, chefs are adding spinach, eggplant, barbecue chicken, blue cheese and other ingredients to create incredible gourmet calzones.
All competitors will be responsible for bringing their own dough and ingredients to make their signature calzones. The audience will be able to observe preparation techniques and hear the contestants explain how they assemble their calzone. Judging will be based on the overall menu fit, use of quality ingredients, overall taste, preparation and presentation. The winner will receive $1,000 and a plaque.
The competition will take place on Wednesday, October 7 from 9 a.m. to 5 p.m. and is limited to the first 25 registrations.
